The Iberian pig
comes from the Iberian Peninsula, a mountainous area bordering Spain and Portugal.
They typically roam around foraging trees of acorns that in turn becomes their main source of diet apart from oak and nuts – also the reason for the nutty and earthy flavors attached to the meat. This means that the Iberian pigs are breed free range instead of in a pen.
When raw, its rich and rosy meat looks similar to beef. Due to the genetics built, the pig has the ability to store fat inside their muscle tissue instead of just around it which they are able to produce a beautiful marbling of fat. Also popularly known to the world, Jamon Iberico is one of the world’s most expensive dry cured ham produced from the breed.
